Creamy Low Carb Frisp Okra Curry

Okra is a nutrient rich vegetable known for its high fiber, antioxidants, and essential vitamins. Light, natural, and low in calories, it supports digestion, helps maintain heart health, and provides a clean, wholesome energy boost. Okra is a simple and healthy choice for everyday snacking and cooking.

Here are the ingredients and method to make healthy tasty creamy low carb Frisp okra curry :

Serves : 2-3 | Time : 45 minutes

Ingredients :

  1. 1 tbsp of Coco Earth Liquid Coconut Oil
  2. 1 onion, finely sliced
  3. 250g Frisp okra, sliced  (Available in Woolworths, Canned Veg section )
  4. 1 cup cooked or canned chickpeas
  5. 2 medium tomatoes, chopped
  6. 1–2 tsp curry powder
  7. 1 tsp cumin
  8. 1 tsp garam masala (or to taste)
  9. 1/2 tsp turmeric (optional)
  10. 1 cup coconut milk
  11. Salt and pepper, to taste
  12. 1 cup cooked quinoa and brown rice mix
  13. Fresh coriander/parsley, to serve

                                       

                                                              Instructions 

  1. Heat oil in a large pan over medium heat. 
  2. Add the onion and sauté until soft and lightly golden. 
  3. Add Frisp okra, chickpeas and chopped tomatoes. Cook for another 2–3 minutes until the tomatoes soften. 
  4. Sprinkle in the curry powder, cumin, garam masala, turmeric (if using), salt and pepper. 
  5. Stir well so everything is coated in the spices. Pour in coconut milk and bring the curry to a gentle simmer.
  6.  Let it cook for 8–10 minutes until the sauce thickens slightly and the flavours meld. 
  7. Spoon the curry over a mix of cooked quinoa and brown rice. Sprinkle with fresh coriander or parsley before serving and enjoy right away.
