Hearts of Palm Ceviche

Serves  5-6

 

                                                          Ingredients

                   1- 1 can Frisp Hearts of Palm, drained, rinsed and diced

                   2- 1 can butter beans, drained and rinsed

                   3- ¼ red onion, finely diced

                   4- 2 tomatoes, seeds removed, finely diced

                   5- 1 firm avocado, peeled, cubed

                   6- ¼ bunch coriander, washed, finely chopped

                   7- ½ - 1 tsp chilli paste

                   8- 1 orange, juiced

                   9- 5 limes, juiced

                  10- Corn chips or plantain chips, to serve

                  11- Extra Virgin Olive oil, drizzle

                  12- Salt, to taste (needs to be well)

 

                                                              Instruction 

Step 1 - In a bowl, combine the hearts of palms, butter beans, red onion, tomatoes, avocado, and coriander.        

Step 2 - Add the chilli paste, orange juice, and lime juice.

Step 3 - Season with salt to taste, let marinate for at least half an hour and serve with a drizzle of extra virgin olive oil.                

Step 4 - Serve with corn chips or plantain chips.
