Low Carb Omega Boost Hearts of Palm Salad

Ingredients

Serves 2–3

Salad:

  • 1 cup Frisp Hearts of Palm

  • 1 cup baby spinach or mixed greens

  • ½ cup cooked quinoa

  • ½ avocado, sliced

  • ¼ cup cucumber, sliced

  • ¼ cup shredded carrots

  • 2 tbsp walnuts, roughly chopped

  • 1 tbsp chia seeds

  • 1 tbsp flaxseeds (ground or whole)

  • 1 tbsp pumpkin seeds

Omega Lemon Flax Dressing:

  • 2 tbsp  Coco Earth Liquid Coconut oil

  • 1 tbsp fresh lemon juice

  • 1 tsp Dijon mustard

  • 1 tsp honey or maple syrup

  • 1 tsp ground flaxseed

  • Salt & freshly ground black pepper to taste

Instructions

  • Cook quinoa and allow it to cool slightly. Wash and dry the greens.

  • Drain and rinse canned Hearts of Palm and lightly season with a pinch of salt and a squeeze of lemon.

  • In a small bowl, whisk together Coco Earth liquid coconut  oil, lemon juice, Dijon mustard, honey, ground flaxseed, salt, and pepper until well combined.

  • In a large bowl, layer spinach and quinoa as the base. Add Frisp Hearts of Palm, avocado, cucumber, carrots, walnuts, chia seeds, flaxseeds, and pumpkin seeds.

  • Drizzle the omega lemon flax dressing evenly over the salad and toss gently before serving.
