Tropical Mango Hearts of Palm Salad

Low Carb Omega Boost Hearts of Palm Salad
Ingredients
Serves 2–3
Salad:
1 cup Frisp Hearts of Palm
1 cup baby spinach or mixed greens
½ cup cooked quinoa
½ avocado, sliced
¼ cup cucumber, sliced
¼ cup shredded carrots
2 tbsp walnuts, roughly chopped
1 tbsp chia seeds
1 tbsp flaxseeds (ground or whole)
1 tbsp pumpkin seeds
Omega Lemon Flax Dressing:
1 tbsp fresh lemon juice
1 tsp Dijon mustard
1 tsp honey or maple syrup
1 tsp ground flaxseed
Salt & freshly ground black pepper to taste
Instructions
Cook quinoa and allow it to cool slightly. Wash and dry the greens.
Drain and rinse canned Hearts of Palm and lightly season with a pinch of salt and a squeeze of lemon.
In a small bowl, whisk together Coco Earth liquid coconut oil, lemon juice, Dijon mustard, honey, ground flaxseed, salt, and pepper until well combined.
In a large bowl, layer spinach and quinoa as the base. Add Frisp Hearts of Palm, avocado, cucumber, carrots, walnuts, chia seeds, flaxseeds, and pumpkin seeds.
Drizzle the omega lemon flax dressing evenly over the salad and toss gently before serving.
