Fresh Herb & Hearts of Palm Medley

Ingredients

Serves 2–3

Salad:

  • 1 cup Frisp Hearts of Palm

  • 1 cup baby spinach or arugula

  • ½ cup cucumber, thinly sliced

  • ¼ cup cherry tomatoes, halved

  • 2 tbsp fresh parsley, finely chopped

  • 2 tbsp fresh coriander, chopped

  • 1 tbsp fresh mint leaves, finely sliced

  • 2 tbsp toasted pine nuts or sliced almonds

  • 2 tbsp crumbled feta (optional)

Herb Lemon Dressing:

Instructions
  • Prepare the Frisp Hearts of Palm. Drain and rinse the canned Hearts of Palm. Wash and dry the greens and fresh herbs thoroughly. Slice the cucumber and halve the cherry tomatoes.

  • In a small bowl, whisk together Coco Earth liquid coconut MCT oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until emulsified.

  • In a large bowl, combine greens, Frisp Hearts of Palm, cucumber, cherry tomatoes, parsley, coriander, and mint.

  • Drizzle the herb lemon dressing over the salad and toss gently to coat. Sprinkle it with toasted nuts and feta (if using) before serving.
