Tropical Mango Hearts of Palm Salad

Ingredients

Serves 2–3

Salad:

  • 1 ripe mango, diced

  • 1 cup mixed greens (baby spinach or arugula)

  • ½ red bell pepper, thinly sliced

  • ¼ red onion, thinly sliced

  • ½ avocado, diced

  • 2 tbsp fresh cilantro, chopped

  • 2 tbsp roasted cashews or peanuts


Tropical Lime Dressing:

  • 2 tbsp fresh lime juice

  • 1 tsp honey or maple syrup

  • ½ tsp grated fresh ginger

  • 1 small pinch chili flakes (optional)

  • Salt & black pepper to taste

Instructions

  • Drain Frisp Hearts of Palm .Dice the mango and avocado. Thinly slice the bell pepper and onion.

  • In a small bowl, whisk together lime juice, Coco Earth liquid coconut MCT oil, honey, grated ginger, chili flakes, salt, and pepper until well combined.

  • In a large serving bowl, arrange mixed greens as the base. Add Frisp Hearts of Palm, mango, bell pepper, onion, and avocado.

  • Drizzle the tropical lime dressing evenly over the salad. Garnish with chopped cilantro and roasted nuts for added crunch.
