Hearts of Palm & Avocado Salad

Ingredients

For the Salad:

  • 2–3 Gem lettuces, chopped

  • 2 medium tomatoes, sliced

  • 1 ripe avocado, sliced

  • ¼ red onion, thinly sliced

  • Fresh coriander leaves, for garnish


For the Simple Vinaigrette:

  • 2 parts neutral oil

  • 1 part white vinegar

  • 1–2 teaspoons honey (to taste)

  • 1 teaspoon Dijon mustard

  • Salt, to taste

Instructions

  1. Chop the gem lettuce into bite-sized pieces.

  2. Slice the tomatoes, avocado, and red onion thinly.

  3. Arrange the chopped lettuce in a serving bowl.

  4. Top with sliced tomatoes, avocado, and red onion.

  5. Add the drained Frisp Hearts of Palm.

  6. In a small bowl, whisk together the neutral oil, white vinegar, honey, Dijon mustard, and salt until well combined.

  7. Drizzle 2–3 teaspoons (or as desired) of the vinaigrette over the salad

  8. Finish with fresh coriander leaves.

  9. Serve immediately, pair  with grilled chicken if desired.
