Low-Carb Hearts of Palm Fresh Mix

Ingredients

(Serves 2–3)

  • 1 can Frisp Hearts of Palm

  • 1 cup cucumber, diced

  • 1/2 cup cherry tomatoes, halved

  • 1/2 avocado, cubed

  • 1/4 red onion, thinly sliced

  • 2 tbsp fresh parsley or cilantro, chopped

  • 2 tbsp Coco Earth Liquid Coconut oil

  • 1 tbsp fresh lemon juice

  • 1 tsp apple cider vinegar

  • Salt and black pepper to taste

  • Optional: 1 tbsp pumpkin seeds or sunflower seeds for crunch

Instructions

  • Drain and rinse the canned Hearts of Palm. Place them in a large mixing bowl.

  • Add diced cucumber, cherry tomatoes, avocado, and red onion to the bowl.

  • In a small bowl, whisk together Coco Earth liquid coconut oil, lemon juice, apple cider vinegar, salt, and black pepper until well combined.

  • Pour the dressing over the salad mixture and gently toss to coat evenly.

  • Sprinkle with fresh herbs and seeds (if using). Serve immediately chilled for a refreshing, low-carb meal or side dish.
