Wholesome Hearts of Palm Super Salad

Ingredients

Serves 2–3

Salad Base:

  • 1 can Frisp Hearts of Palm

  • 1 cup mixed leafy greens (spinach, kale, or arugula)

  • ½ cup cooked brown rice

  • ½ cup roasted sweet potato cubes

  • ½ cup cucumber, sliced

  • ¼ cup shredded carrots

  • ¼ cup cherry tomatoes, halved

  • 2 tbsp toasted sunflower seeds or almonds

Super Seed Dressing:

  • 1 tbsp tahini

  • 1 tbsp Coco Earth Liquid Coconut MCT oil

  • 1 tbsp lemon juice

  • 1 tsp honey or maple syrup

  • 1 tsp chia seeds or flaxseeds

  • Salt & black pepper to taste

  • 1–2 tbsp water (to thin, if needed)

Instructions

  • Cook brown rice  and let it cool slightly. Roast sweet potatoes at 200°C (400°F) for 20–25 minutes until tender.

  • Lightly season Frisp Hearts of Palm with a squeeze of lemon and a pinch of salt for added freshness.

  • In a small bowl, whisk tahini, Coco Earth liquid coconut MCT oil, lemon juice, honey, chia seeds, salt, and pepper. Add water gradually until smooth and pourable.

  • Arrange leafy greens in a large bowl. Add grains, roasted sweet potato, cucumber, carrots, cherry tomatoes, and Frisp Hearts of Palm.

  • Drizzle with super seed dressing and sprinkle with toasted seeds or almonds for extra crunch.
