Rocky Road Short Bread

Made with Frisp Raspberry Crisps for a burst of natural berry flavour and crunch, this Rocky Road Shortbread is a simple, indulgent treat with no artificial additives. A perfect balance of buttery shortbread, rich chocolate and fruity crisp texture.

Here is a complete guide with all the ingredients and easy-to-follow steps to make delicious Rocky Road Shortbread using Frisp Raspberry Crisps. Perfect for an easy dessert, afternoon tea, or a sweet homemade gift.

Ingredients

For Rocky Road Mixture

  • 1 cup mini pink & white marshmallows

  • ½ cup glace cherries

  • 1 cup white chocolate chips/chunks

  • ½ cup chocolate balls, cut into pieces

  • 1 ½ cup melted milk or dark chocolate (for mixing everything together)


For Shortbread Base/Topping

  • 16–18 shortbread biscuits 

(This usually covers a standard rectangle slice tray 8x10 inch or similar)


Crispy Topping

  • 2 tsp melted white chocolate, for drizzling.

Instructions

  • In a large bowl, mix:

        Marshmallows
        Glace cherries
        White chocolate chunks
        Chocolate ball pieces
        Optional: small crushed pieces of shortbread for extra crunch

  • Pour in 1 ½ cup melted chocolate and mix well to coat everything.

  • Spread the mixture evenly into a lined slice tray.

  • Arrange 18–20 shortbread biscuits on top (press gently). 

  • Drizzle 2 tsp melted white chocolate over the shortbread.

  • Crush the raspberry crisps and sprinkle over the top.

  • Refrigerate until fully set (2–3 hours), then cut into squares and enjoy.
