Ingredients
2 large eggs 100g creamed cottage cheese 80g Greek yoghurt 2 tbsp sugar free granulated sweetener to taste or preferred 1 tsp vanilla extract 15g Coco Earth oat flour 1 tbsp lemon zest 30g small diced strawberries, you can use Frisp Diced Strawberry Crisps
For Topping 30g vanilla coconut yoghurt 30g strawberries (microwaved 30 sec & cooled) Drizzle of maple syrup (optional)

Instructions In a bowl, add eggs, cottage cheese, yogurt, vanilla, sweetener, oat flour, and lemon zest. Blend with an immersion blender until smooth. Gently fold in the chopped strawberries. Pour into a greased ramekin and microwave on high (900W) for 5 minutes. Flip onto a plate and let cool at room temperature. Once cooled, transfer to fridge to chill for at least 30 minutes or ideally overnight (6–8 hours) for the creamiest texture Serve topped with yoghurt and warmed berries
