Strawberry Cheesecake Mug Bake

When you are craving a quick dessert but don’t want the hassle of baking, a Strawberry Cheesecake Mug Bake is the perfect solution. This quick mug bake is ideal for busy days, late-night cravings, or when you want a single-serve dessert without leftovers.

With Strawberry Diced Fruit Crisps, making a delicious strawberry cheesecake has never been faster or easier-simple, convenient, and tasty.

Ingredients


 For Topping

  • 30g vanilla coconut yoghurt

  • 30g strawberries (microwaved 30 sec & cooled)

  • Drizzle of maple syrup (optional)

Instructions

  • In a bowl, add eggs, cottage cheese, yogurt, vanilla, sweetener, oat flour, and lemon zest.

  • Blend with an immersion blender until smooth.

  • Gently fold in the chopped strawberries.

  • Pour into a greased ramekin and microwave on high (900W) for 5 minutes.

  • Flip onto a plate and let cool at room temperature.

  • Once cooled, transfer to fridge to chill for at least 30 minutes or ideally overnight (6–8 hours) for the creamiest texture

  • Serve topped with yoghurt and warmed berries
