Summer Citrus Hearts of Palm Salad

Ingredients

Serves 2–3

Salad:

  • 1 cup mixed salad greens (rocket, baby spinach, or arugula)

  • 1 orange, peeled and segmented

  • 1 grapefruit, peeled and segmented

  • ½ avocado, sliced

  • ¼ red onion, thinly sliced

  • ¼ cup cherry tomatoes, halved

  • 2 tbsp toasted almonds or walnuts

Citrus Dressing:

  • 2 tbsp fresh orange juice

  • 1 tbsp lemon juice

  • 1 tsp honey or maple syrup

  • Salt & freshly ground black pepper to taste


Instructions

  • Drain and rinse Frisp Hearts of Palm. Segment the orange and grapefruit, removing any seeds. Thinly slice the onion and halve the cherry tomatoes.

  • In a small bowl, whisk together orange juice, lemon juice, Coco Earth liquid coconut MCT oil, honey, salt, and pepper until well combined.

  • Arrange mixed greens in a large serving bowl. Top with Hearts of Palm, citrus segments, avocado slices, red onion, and cherry tomatoes.

  • Drizzle the citrus dressing evenly over the salad. Sprinkle with toasted nuts for added crunch. Serve immediately for the freshest flavour.
